Roast vegetable and Pasta Salad
INGREDIENTS
- 250g Penne Pasta
- 200g What’s Cooking Dip and Dressing Peri Peri
- 500g Mixed Vegetables
- 50ml Olive oil
- 50g Feta
- 5g Fresh basil
METHOD
- Pre-heat oven to 180C
- Cut vegetables in cubes and drizzle with olive oil
- Place in oven and roast for 20 minutes, remove from oven and allow to cool down
- While the vegetables are roasting, cook your pasta until al dente
- Rinse pasta under cold water and allow to cool down
- Mix together Peri Peri sauce and pasta.
- Scatter roast vegetables on top of the pasta, crumble the feta over and garnish with shredded basil
